Our Extract
Making Pure Vanilla Extract is an exacting craft. The vanilla bean contains over 200 flavor "notes" and fine extracts bring out most of these by slow cold extraction methods. Vanilla extract that appears overly cloudy have usually been processed using heat methods, which while faster and less expensive, lose almost 80% of the subtle flavors achieved by cold extraction, hence the vast difference in flavor, desirability and cost of fine extracts and products commonly sold in grocery stores. Moisture content of the beans, type and percentage of alcohol and what sugars and syrups may be added are strictly regulated by the FDA. Many products such as "Pure Mexican Vanilla" are anything but and many contain carcinogens and are sold illegally in the U.S..  South Seas Pure Vanilla Extract contain only Organic Beans, Pure Alcohol (35% per law) and purified water and is made in small batches, with no added sugars. We know it is as fine as any Pure Vanilla Extract in the world.

Of the many different vanilla species of orchids, only two are used for commercial purposes, V. Tahitensis and V. Planifolia, better known as Tahitian and Bourbon vanillas, respectively. They have differing aromas and fragrance and neither is considered "better" than the other. Vanilla is one of the most labor intensive crops in the world, making it the 3rd most expensive spice behind Saffron and Cardamom. Flowers must be hand pollinated and then properly cured following harvest. Store Vanilla Beans wrapped in plastic wrap..preferably triple wrapped in a cool, dry place..Do not refrigerate or freeze. To use, slice lengthwise and scrape the small seeds to add to your recipe. One bean equals one tablespoon of pure extra.  The Food and Drug Administration requires that products labled as "Pure Vanilla Extract" consist of a minimum of 35% alcohol in order to properly disolve and suspend the extractive of the vanilla beans. Numerous products are marketed in the U.S. as "Vanilla Extract", "Pure Vanilla", "Mexican Pure Vanilla" and "Vanilla", among other variations. These products ARE NOT Pure Vanilla Extract and for the most part DO NOT contain any natural vanilla at all, or at best, minute percentages, added for flavor. The sad fact is that many American consumers fall for this misleading labeling, unaware of what it is, exactly, that they are purchasing. For the most part what they are purchasing is synthetic or "imitation" vanilla, sold under the name vanillan. This is a chemical that is synthesized from the by-products of the pulp wood and paper manufacturing industries with sweeteners and sometimes a small amount of Pure Vanilla Extract added. Many people talk about the "great deal" they got on a giant sized bottle of "Pure Mexican Vanilla", not aware that what they bought in reality was a $5 or $6 bottle of imitation vanilla extract that they could have purchased at any grocery store for $1. As with most things in life, you get what you pay for. Pure Vanilla Extract is an expensive and time consuming product to make properly and if of high quality, is naturally going to be more expensive, not to mention much more complex and flavorful than a chemical imitation.
